Roll from beets can be safely served to the festive table: it has an excellent appearance, excellent taste and unique aroma. Try to cook temptingly delicious roll at least once - and this delicacy will become a frequent guest in your kitchen. From the simplest ingredients, you get an amazing salty snack.



  • boiled beets - 130 grams;
  • milk - 100 milliliters;
  • flour - 90 grams;
  • chicken egg - 1 piece;
  • vegetable (olive) oil - 1 tablespoon;
  • salt to taste;
  • Fresh green onions;
  • herring - 100 grams;
  • butter - 70 grams;
  • mayonnaise - 2 tablespoons.

Wonderful beet roll. Step-by-step recipe

  1. For a wonderful beet roulade, we need one boiled beet (about 130 grams of beet).
  2. Beetroot for beets is cleaned and mashed in puree with a blender.
  3. Tip: it is very good to use sweet beets, but if you have a beet that gets unsweetened, you can add a pinch of sugar.
  4. Puree the beetroot into a deep bowl.
  5. At one hen's egg we separate the protein from the yolk.
  6. In a bowl to the beet, add one egg yolk (without protein), and mix well until smooth.
  7. Then pour in the milk and mix again.
  8. Now add the vegetable oil and mix again.
  9. Tip: you can use olive oil instead of vegetable oil.
  10. And only now we add wheat flour (according to the recipe) and mix the dough for a wonderful beet roulade.
  11. Whisk egg whites until firm peaks with a mixer.
  12. Beat the egg white into the dough, and mix everything until a homogeneous mass is obtained.
  13. The form for baking (I used a rectangular shape) is covered with parchment paper (or you can use a silicone mat).
  14. Pour the dough into the prepared form and distribute it evenly.
  15. We bake the workpiece for a roll in a well heated to 220 degrees oven for 15-20 minutes.
  16. This time we will prepare the filling for a wonderful beet roulade.
  17. In the bowl of the blender we shift the herring (according to the recipe) and grind it.
  18. In a bowl to the chopped fish send butter and mix well until a homogeneous mass is obtained.
  19. Then add two tablespoons of mayonnaise and mix again. Herring oil for beet roulade is ready.
  20. Green onion is well washed and finely ground with a knife.
  21. We remove the prepared blank for the roll from the mold, remove the parchment paper (or silicone mat) from it, wrap the warm blank in the form of a roll in a clean kitchen towel and leave it until it cools down completely.
  22. The cooled beet roll is unfolded, greased with a ready-made herring filling, sprinkled with green chopped onions and wrapped again.
  23. Ready-made beet roll is densely wrapped in food film.
  24. We leave the roll in the film for 5-6 hours.
