I was lucky: today I tasted very tasty carrot muffins - the recipe for their cooking was shared by a friend. Bright carrot muffins of orange color, just melt in the mouth, very tender - they can even be eaten by a toothless child. And that they are unusually useful, I think, you guessed it yourself. After all, carrots are an abundance of vitamins and all sorts of useful substances. Is it possible, something tastier and more useful to prepare for an evening tea party? Buy carrots - and quickly to the kitchen!



  • 100 grams of carrots;
  • 70 grams of vegetable oil;
  • 100 grams of sugar;
  • 110 grams of flour;
  • 1 egg;
  • 0.5 teaspoons baking powder;
  • 0.25 teaspoons of soda;
  • 0.25 teaspoon ground ginger;
  • 0.25 teaspoon ground cinnamon;
  • coconut shavings - for sprinkling muffins;
  • confectionery powder - for decorating muffins.

Delicious muffins with carrots. Step-by-step recipe

  1. First of all, we rub the carrots on a small grater. Of course, raw and necessarily in shallow, if you choose a large grater, the carrot will not be baked and in muffins will look ugly.
  2. In order not to make a mistake in weight, suddenly you do not have scales in the kitchen, you know: 100 grams of carrots is one medium root. With already grated carrots merge the juice: otherwise the dough will look unbaked.
  3. In carrots pour the vegetable oil, add the egg and boldly mix until the state of uniformity. You can do this with a spoon and a shovel.
  4. When sifted flour, add to it our spices: ginger and cinnamon. By the way, if you do not like something, you can simply remove some ingredient or not use them at all. Follow them by all means put the soda and baking powder. Then just stir with a spoon.
  5. In the carrot weight we fill up sugar: this amount will be enough for our recipe, so that the muffins are sweet. And stir again.
  6. It remains to add flour with spices and carefully knead the dough until smooth. Consistency of it, like a pancake. Two or three minutes for settling, so that the baking powder and flour "make friends" with each other.
  7. Forms for carrot muffins can be taken any. Suitable and paper, and silicone. With the first problems are not present: in them simply impose a dough. Silicone, lightly oil it, so that the muffin of them, after baking, easily jumped out.
  8. Forms fill no more than ⅔: the dough will rise, and they will be completely filled - to the sides. For filling it is possible to use a confectionery bag, and it is possible and an ordinary spoon.
  9. The moment of muffin decoration came up. Third, we sprinkle with coconut shavings, the second part - with a confectionery powder, and leave one part without anything. In fact, for decoration you can use everything you want: nuts, candied fruits.
  10. The oven was turned on and heated to 180 degrees. Send the muffins to bake for 15-20 minutes. We are checking the baking as usual with a toothpick.
  11. The muffins are ready. Let them cool down, and easily take out of the molds.
