Cheese from milk, cooked at home - an excellent replacement for all the famous product, without which simply can not do in the kitchen.   • three liters of milk with a fat content of at least 2.5%;
  • one tablespoon of salt;
  • a teaspoon of sugar;
  • a teaspoon of citric acid (or 3-4 tablespoons of lemon juice).

  1. In the pot, pour out the milk, add salt and sugar on prescription. Put the dishes on the stove.
  2. As soon as the foam appears and the milk starts to bubble (but does not boil yet) add citric acid or lemon juice.
  3. Stir, reduce heat and cook for 3-4 minutes. Milk curdles and flakes are formed.
  4. Remove the pan from the fire when we see a clear separation of the mass into flakes and serum. If overexposed, the cheese will be rubbery.
  5. We put a colander on an empty pot, cover it with gauze and pour out a lot of it.
  6. We wait until the whey drains, we tie the cheese in gauze.
  7. We leave it in a colander, put the oppression on top.
  8. After an hour or two, we remove the load. We take the cheese out of the cheesecloth and put it in the refrigerator until it cools down.
  9. Of the three liters of milk, 400 grams of cheese is obtained. You can store it in the refrigerator for up to 7 days.
