Cheese from milk, cooked at home - an excellent replacement for all the famous product, without which simply can not do in the kitchen. Gentle cheese turns soft, fragrant, fairly dense, with a slight creamy aftertaste. And this appetizer is prepared quickly and easily.
- three liters of milk with a fat content of at least 2.5%;
- one tablespoon of salt;
- a teaspoon of sugar;
- a teaspoon of citric acid (or 3-4 tablespoons of lemon juice).
Very delicious homemade cheese. Step-by-step recipe
- In the pot, pour out the milk, add salt and sugar on prescription. Put the dishes on the stove.
- As soon as the foam appears and the milk starts to bubble (but does not boil yet) add citric acid or lemon juice.
- Stir, reduce heat and cook for 3-4 minutes. Milk curdles and flakes are formed.
- Remove the pan from the fire when we see a clear separation of the mass into flakes and serum. If overexposed, the cheese will be rubbery.
- We put a colander on an empty pot, cover it with gauze and pour out a lot of it.
- We wait until the whey drains, we tie the cheese in gauze.
- We leave it in a colander, put the oppression on top.
- After an hour or two, we remove the load. We take the cheese out of the cheesecloth and put it in the refrigerator until it cools down.
- Of the three liters of milk, 400 grams of cheese is obtained. You can store it in the refrigerator for up to 7 days.
