- eggplant - 4 pieces (1 kilogram);
- 250 grams of walnuts;
- five cloves of garlic;
- 1 tablespoon of vinegar;
- 1 teaspoon of hops-suneli;
- olive oil for lubricating eggplant + for filling (1 tablespoon);
- ground red and black pepper, salt - to taste.

- At eggplants we remove the tips, we remove from two opposite sides along the strip of peel and cut into strips: their thickness is 4-5 millimeters.
- Each eggplant plate is well sprinkled with salt from both sides and piled into a bowl. Let's lie down for 20-25 minutes to get all the bitterness.
- While eggplants are standing, start to prepare the filling of walnuts and garlic for rolls. 200-250 grams of walnuts are ground in a bowl of a blender.
- There, we chop the cloves from garlic with 1 tablespoon of olive oil;
- Mix in the bowl chopped garlic with walnuts. Mix well.
- To nuts, add vinegar and hops-suneli spices (according to the recipe), black and red ground pepper add to taste. Once again, we mix everything thoroughly - and the filling for the rolls is ready. If the filling is dry and crumbly, you can add water (no more than 2 tablespoons).
- Eggplants let the juice out, all bitterness came out of them: we put them on a paper napkin.
- Dry the eggplants grease on both sides with olive oil: you can use your hands, or you can use a silicone brush.
- We will fry eggplants on the dry side: they have already been soaked with oil. Fry from two sides until golden brown.
