The recipe for the salad "Herring under the fur coat" I got from my grandmother. In the Soviet times this traditional salad was always prepared in our family for festive events. A slightly improved recipe for "Herring under the fur coat" I still cook today: in the form of a roll or in potato boats. Try to cook according to my recipe - and you will surprise your family and guests.
- Red beet - 1 piece (medium size);
- potatoes - 5 pieces (medium size);
- onion - 1 piece;
- herring salted - 1 piece (fillet);
- carrots -1 piece;
- eggs - 2 pieces;
- mayonnaise - 150-170 milliliters.
"Herring under the fur coat" salad. Step-by-step recipe
- Today I propose to prepare a salad "Herring under a fur coat" in potato boats. To do this, we boil potatoes of medium size in a uniform until they are ready.
Council. For this salad you need to take potatoes, which is well boiled.
- Ready potatoes peeled off, cool a little and warmed still in mashed potatoes.
- From warm mashed potatoes it is convenient to make boats when the potatoes cool down - it will keep the shape well. Fill the prepared molds with mashed potatoes, in the middle forming a groove. And we send ready-made boats to the cold.
Council. The mold can be made from a shallow package from yoghurt or any other dessert. The middle of the mold should be covered with food film, so that ready-made boats can be easily removed. Of this amount of mashed potatoes, an average of 7-8 boats. If the edges of the boat are uneven, they can be corrected with scissors.
- Buryak, carrots, eggs pre-boil until cooked and completely cooled.
- Vegetables need to be cleaned and grinded on a grater with large holes (each separately).
- Peel on onions and cut into small cubes.
- Fillet of salted herring, too, cut into cubes. The size of the cubes does not matter: cut as you like.
If you have a whole herring, it must be cleaned of the skin and the viscera, separate the flesh from the ridge and choose with the help of tweezers all the bones.
- Cut the herring with onions. You can, if desired, a little syrup with vinegar.
- Cooled potatoes for salad "Herring under the fur coat", greased with mayonnaise (you can buy it, or you can cook with your own hand, according to the recipe, which you can see on the site "I love to cook"). We fill with fish filling.
- Then alternately lay out the other components of our salad "Herring under the fur coat" layers: eggs, carrots and, to the very top, beets.
Council. For this salad, beetroot is better to take very sweet: then it will well shade the salty taste of herring. Each layer should be slightly primed and lightly smeared with mayonnaise or, with a thin trickle, mayonnaise grate.
- Potato boats can be slightly, with a brush, tinted with beet juice. Over the beet, make a mayonnaise net. This is done using a pastry syringe or a simple plastic bag filled with sauce, with a cut off corner. The smaller the hole, the thinner the trickle of mayonnaise.
- Next, decorate our stuffed herring with boats parsley, cut from the remains of boiled eggs or vegetables with flowers.
Such a salad supply "Herring under the fur coat" is more suitable for buffet tables. But for a family feast, such a salad will also be very handy.
There is one more original and unusual way of giving a salad "Herring under a fur coat" - in the form of a roll.
- For this we boil vegetables, as in the traditional recipe.
- All the vegetables after complete cooling, we clean the skin and rub it on the grater. To prepare a salad in the form of a roll, vegetables should be grated on with a medium-sized hole.
- Boiled eggs boiled eggs, also grind.
- Beets, like the most juicy vegetable in this salad, you need to strain a little. You can do this with a gauze or a glass stopper.
- Herring needs to be cleaned and cut: as well as in the first recipe.
- Onions are also crushed in the form of cubes. It can be pre-marinated in vinegar, sugar and water.
- When all the ingredients are prepared, start to collect the salad.
- On a flat surface of a table or a kitchen board we roll food film. Lay the layer of pressed beet with a layer 0.5-1 cm thick. Over the beets in the same way we spread carrots, potatoes, grated eggs, onions and, at the end, spread the herring.
- Each layer must necessarily be smeared with mayonnaise or make a mayonnaise net.
Council. Each next layer of lettuce should be several centimeters smaller than the previous one: that is, do not go to the end.
- After each layer of vegetables is smeared and spread out, wrap the roll - it's easy to do thanks to the film.
- Then we send the finished roll to the cold for a few hours: to roll it.
- When serving on the table, we take off the food film, and decorate the salad with parsley sprouts or a mayonnaise mesh.
