Previously, very tasty cutlets from the chicken breast and liver were sold in the culinary department of the Metropol hotel (hence the name). Fast homemade chops, prepared according to the recipe-improvisation, I think, are very similar to the original. Juicy cutlet from the chopped chicken fillet with a delicate filling from the liver and a crusty bread crust is just a song. Juicy aromatic cutlets my relatives very much like, therefore I prepare them enough often.


  • one chicken breast without skin;
  • 100 grams of chicken liver;
  • one head of onions;
  • salt and black ground pepper - to taste;
  • vegetable oil for frying.

For breading:

  • a little flour;
  • one egg and 1-2 teaspoons of milk;
  • bread crumbs or grated white bread.

Very tasty cutlets "Metropol". Step-by-step recipe

  1. Let's start with the toppings for home-made cutlets: we twist 100 grams of chicken liver in a meat grinder.
  2. A small head of onions is cut very finely.
  3. In a frying pan, warm up the sunflower oil, fry the onions.
  4. We spread the chicken liver, on a strong fire fry 1-2 minutes.
  5. Remove the frying pan from the heat and allow the filling to cool. Then salt and pepper to taste, mix.
  6. Chicken breast is halved, and then each halves into three parts: we separate a small fillet, and a large cut in half. How to do it correctly, look at the video under the recipe.
  7. Cover the piece with a film or wrap it in a bag, beat off the flat side of the hammer to a very delicate state. Especially carefully beat off the edges.
  8. Each chopped piece of chicken fillet is salted and peppered.
  9. We form cutlets from chicken breast. We put the filleted fillets on a film, we spread on it a stuffing from a liver, we turn off, forming an oval cutlet.
  10. Before frying, each cutlet is rolled in flour, dipped in a whipped egg-milk mixture. We pan in breadcrumbs or grated white bread.
  11. Chicken cutlets are covered with food film, we put it in the refrigerator for two hours (or at least 30 minutes).
  12. Fry the patties with a filling in a frying pan, in a well-heated vegetable oil, turning over several times during cooking.

Serve cutlets from a chicken breast with a heat with a heat: then they are more juicy and soft. After cooling, it is also very tasty, but it's a little different. The best garnish for chops stuffed with chicken liver is mashed potatoes. And if you still prepare salad from fresh vegetables - the enthusiasm of eaters will not be the limit.
