Ingredients:

  • fillet of salmon - 500 grams;
  • eggs - 2 pieces;
  • green onions - a small bunch;
  • cornstarch - 2 tablespoons;
  • lemon or lime juice - 1 teaspoon;
  • salt;
  • black pepper fragrant;
  • dried spices;
  • vegetable oil - for frying.

  1. Prepare the salmon fillet (instead of salmon you can take trout). Mine red fish, remove the skin, since we only need fillets (it is desirable to remove the fat layer) and remove the bones. For this you can use a special tweezers for fish.
  2. We cut the fillets into small cubes, about nine millimeters in size, because cutlets will be chopped. At will, you can skip fish through a meat grinder or combine harvester: but it will not be chopped chops, but ordinary ones.
  3. Let's move on to the green onion: again, you can replace it with a fresh onion, or any other greens that you have. Chop onion lightly with a knife.
  4. To a bow and fish we add a little cornstarch: we need it for gluing fish cutlets.
  5. We take the eggs and separate the yolks from the proteins. In this recipe, I advise you to use only proteins. Only with protein cutlets are obtained more tenderly, tastier and, of course, less caloric. Yolks can be useful for any other dish. According to your desire and taste, you can add and fully egg: but then the taste will change a little.
  6. Squeeze out the juice from fresh lemon or lime: a few drops. If you do not have fresh citrus fruits, you can buy ready-made juice.
  7. To your taste, salt, pepper black pepper. Instead of salt, you can add soy sauce. If there are dried fragrant herbs in your kitchen, do not be afraid to add a pinch of them.
  8. The resulting mass is carefully but thoroughly mixed!
  9. We take out the frying pan, pour a little vegetable oil on it.
  10. The secret: to vegetable oil, add a little melted butter, it will make stunning dietary cutlets from salmon appetizing, delicious, homemade - and give a golden, ruddy crust. And do not worry at all: such a small piece does not hurt your figure at all.
