Mackerel salted at home, with onion peel

How often you stare at the shops for salted, golden smoked fish (cold smoked). Mind you understand that now there is a lot of poor-quality fish processed with different preparations to make it more attractive. We very often buy, without even knowing what is really being sold to us. Therefore, let's prepare together mackerel of spicy home salting, in the recipe of which only natural products will be used. As a result, we will get a very tasty salted fish as golden as in the store.



  • mackerel - 1 piece;
  • water - 1 liter;
  • shells from onions - 1 glass;
  • salt - 3 tablespoons;
  • sugar - 1 tablespoons;
  • pepper black peas - 3 pieces;
  • bay leaf - 1 piece;
  • cloves - 3 pieces;
  • coriander - 0.5-1 teaspoon;
  • dry crusts of orange - if desired;
  • mustard powder - 1/4 teaspoon.

  1. Before you start the domestic salting of fish, you need to know the required amount of marinade. In the tank, where the mackerel of homemade salting will be prepared, fold the fish and pour the water so that it completely covers. I got a liter, and spices I counted on this volume. If you have more or less, then proportionally change the amount.
  2. Water bring to a boil, add onion husks and boil for 10-15 minutes, remove from heat and let it brew for 30-40 minutes.
  3. To drain onion liquid (if it turned out to be less than 1 liter, then add water). The husks can be thrown away, we will not need it.
  4. Add salt, sugar, spices (if desired, add dry crusts of orange), stir, put on the fire and bring to a boil, cook to sugar and salt dissolved, after cooling. Strain on a sieve to remove the bay leaves, orange crusts.
  5. The capacity in which I marinate the fish is a cropped plastic bottle. Put the fish in a container, pour a cooled marinade so that it covers the mackerel, add mustard on the tip of a teaspoon.
  6. We hold for about 4 hours at room temperature, we cover the bottle with food film and put it in the refrigerator for 3-4 days.

During this time, the fish went missing, acquired a very beautiful golden color, became like a shop. We can say that we cooked mackerel, smoked with liquid smoke, at home.
