Chicken stuffed with pancakes, pork and eggs

By the festive events I prepare an interesting and unusual dish: a chicken stuffed with pancakes, pork and eggs. Very tasty dish: with a fine golden crust, soft and delicate filling, juicy fragrant meat. An unusually original looks like a dish in the cut. In addition, a stuffed chicken can have different variations of the filling.

Ingredients:

  • chicken carcass - 1500-1800 grams;
  • pork pulp - 500 grams;
  • sour cream - 2-3 tablespoons;
  • egg - 1 piece;
  • salt - to taste;
  • black ground pepper - to taste;
  • baked thin pancakes - 8 pieces;
  • quail eggs - 40 pieces.

  1. Ready chicken carcass is well washed, wiped with napkins and take out the bones from the chicken, through the gutting site. How to do it right, so as not to damage the skin of chicken carcass, see the site "Very tasty".
  2. We turn the chicken on the wrong side and cut the breast from both sides so that the meat layer remains, one centimeter thick.
  3. Cut the chicken breast and pork pulp to mash, salt to taste, season with black pepper.
  4. Add one egg to the meat, and mix everything thoroughly.
  5. In advance, we bake thin pancakes: we need 8 pieces.
  6. Pancakes grease with minced meat, then spread along (with a chain) quail eggs, boiled hard and previously cleaned from the shell. We fold the pancakes in the form of rolls, tightly pressing the edges to the filling.
  7. When all the pancakes are rolled into rolls, we stuff the chicken with pancakes. Fill it, if necessary, in several layers.
  8. If you have a bit of minced meat, then stuffed pancakes in chicken should be smeared with minced meat, trying to grease every pancake.
  9. Stuffed chicken should be smoothed out, giving it the shape of a chicken carcass, and sew a hole with a needle or thread or fasten with toothpicks.
  10. Chicken legs and wings also need to tie, attaching to the carcase.
  11. Chicken's skin is smeared with sour cream: it is better to use fat. On top of the chicken carcass should be salt and pepper.
  12. We send it to a preheated oven for 180 degrees Celsius for an hour and a half.
  13. When the chicken is baked, the crust blushes, you can take it out of the oven. Cool and cut into portions.
