Ingredients:

  • 100 milliliters of water;
  • 65 grams of sugar + 130 grams per egg;
  • 5 chicken eggs;
  • a couple of tablespoons of cocoa (about 30 grams, but you can not use it at all);
  • 2 tablespoons gelatin;
  • a pinch of citric acid;
  • 2-3 chocolate bars (for decoration).

  1. Before preparing the bird's milk, put gelatin in a separate container and fill it with water so that it swells. Stir well to remove the lumps as much as possible. Leave it to stand for 40 minutes at room temperature.
  2. After the time has passed, pour the swollen gelatin into a saucepan. Then we pour sugar along.
  3. Turn on the hob on the middle fire and put the pan. We stir: it is necessary for us that gelatin with sugar dissolves, but does not boil. Remove from the fire and set aside.
  4. Separate the proteins from the yolks and pour them into a beaker for whipping. Slightly add salt and turn on the mixer: first set a low speed, then constantly increase it. Whisk until a firm mass.
  5. Then in several approaches we send sugar, and each time we beat the protein mass.
  6. We take gelatin, which should already cool to room temperature: and through a strainer pour it into the protein mass. After mixing the consistency either with a mixer at a low speed, or with a conventional spatula.
