Ingredients :

  • 150 grams of water;
  • 4 apples of hard varieties;
  • 4 teaspoons agar-agar;
  • 8 tablespoons of grated Stevia leaves;
  • vanilla;
  • 1 egg.

Homemade marshmallows. The recipe for the steps:

  1. Agar-agar is soaked in water and let it brew for one hour.
  2. Apples are peeled, the cores are removed and cut into quarters. We send them to bake.
  3. Baked apples are rubbed, add 3 tablespoons of stevia, season with vanilla and whisk. The resulting mixture is allowed to cool.
  4. Steady agar agar on a slow fire is brought to a boil with constant stirring. Pour the remaining leaves of stevia and cook for 5-7 minutes. The syrup should thicken and stretch the thread.
  5. Separate the yolk from the protein. The protein is divided into two parts.
  6. Whip the apple puree with a half of protein. The mass should become lush and light.
  7. Slightly cooled agar-agar syrup with a thin trickle pour into the mass with apple puree, but do not stop whipping.
  8. Fill all the syrup, continue to beat the mixture until it becomes very dense, able to keep the shape.
  9. We load the hot mass into the confectioner's bag, and squeeze marshmallows onto a tray covered with parchment paper.
  10. Let us stand for a day.
