Recently I was looking for: with what interesting stuff to make pancakes, and found a delicious lemon cream, it is also called a Kurd. Indeed: the cream of a gentle consistency, with a delicious lemon flavor - already salivating flow - with a slight sourness. He's not sugary, he's just delicious! I cooked for pancakes, but while they were baking, the child managed to eat half of this Kurd. Therefore, I decided to share a delicious recipe for "Very tasty", but I already warn you in advance: do a double portion of lemon cream at once, in order not to boil it again.
- lemon - 1-2 pieces;
- sugar - 125 grams;
- eggs - 2-3 pieces;
- cornstarch - 0.5 teaspoon;
- butter - 90 grams;
- salt - pinch.
Delicious lemon cream. Step-by-step recipe
- We rub the peel with lemons on a fine grater, only the uppermost, brightest part (we need 1 teaspoon) and squeeze out the lemon juice (we will use 90 milliliters).
- Corolla grind eggs and sugar, mix with lemon juice and zest, add sugar and a pinch of salt, cornstarch, finely chopped butter.
- We put on a water bath and, constantly stirring, bring the mass to thickening. The cream itself should not boil, but its temperature should be high.
- Remove from the fire and immediately filter on a sieve to remove lumps and zest.
- In order not to form a dried up crust during cooling, it is necessary to cool it sharply. To do this, we put the vessel with lemon cream in a bowl of ice water and mix it quickly, bring it to a temperature below room temperature.
Kurd is ready! He has a very pleasant creamy, lemon flavor. This cream is perfect for cake and tartlets, biscuit cake and as a filling in a cake, for pancakes and just - with a spoon. To store, pour lemon cream on jars and tightly close the lid, put in the refrigerator. You can store up to a week, but it's unlikely that you will be able to eat so long - eat faster.
