Today, on the eve of spring, I want to share with you a simple recipe for a low-calorie homemade cake "Lemongrass", which my grandmother always prepared. She was a professional confectioner and cooked amazing biscuits. A similar recipe for a very simple lemon cake with sour cream I recently saw on the YouTube channel. It turns out a very airy and gentle cake, with delicate creamy and lemon notes. Such a homemade pie is the perfect dessert for those who do not want to get better.


For biscuit:

  • 6 pieces of eggs;
  • 6 tablespoons of flour;
  • 14 tablespoons of sugar (6 spoons for biscuit, 8 spoons for impregnation);
  • a packet of vanilla sugar;
  • 6 small lemons.

For cream:

  • 1 liter of sour cream 25% fat;
  • thickener for cream;
  • 1 cup of sugar or powdered sugar;

For decoration:

  • half a lemon;
  • coconut shavings of yellow color.

Cake "Lemongrass". Step-by-step recipe

  1. We rub the zest of 6 small lemons and leave to stand for a while.
  2. 3 lemons are cleaned from the white peel, partitions, bones. We leave only the flesh.
  3. Flesh of 3 lemons and 8 tablespoons of sugar beaten with a blender until a homogeneous mass is obtained. We leave the ready mix for a while, so that the sugar will dissolve. With this juice we will soak the finished cakes, so that the cake is not dry.
  4. In order to prepare an air cake at home, you will need 6 eggs (to separate the proteins from the yolks).
  5. Beat whites and yolks separately.
  6. Add 3 tablespoons of sugar. Beat until a thick mass is obtained.
  7. Half of the protein mass is mixed with whipped yolks.
  8. Sift 6 tablespoons of flour.
  9. Add the resulting mixture to the whipped proteins and mix everything neatly with a wooden spatula.
  10. Add 1 teaspoon of lemon peel.
  11. Form with a diameter of 20 centimeters is covered with parchment and poured into it a liquid dough. In the center we make a deepening so that the lemon biscuit is not swollen.
  12. We put in a preheated to 180 degrees oven for 25-30 minutes.
  13. Ready to take the biscuit out of the form, turn it over and let it cool for 4-6 hours.
  14. We cut into 3 equal parts.
  15. We impregnate the cakes with lemon juice and sugar, starting from the edge.
  16. Cooking cream: whisk together the sour cream for 5 minutes to make it airy. Add sugar or powdered sugar (whisk to dissolve sugar), thickener for cream, lemon zest. Each time we carefully beat.
  17. We cover each cake with a lot of cream, about 2 centimeters thick.
  18. From the top and side, too, tighten the cream and sprinkle with coconut shavings. On request, we decorate thinly sliced ​​slices of lemon.
  19. We let it brew for a couple of hours and can be served to the table.

From myself I can add that the recipe for the cake "Lemongrass" will be a real find for lovers of homemade cakes. The pie turns out not dry, but well impregnated, moderately sour, moderately sweet.
