My friend shared with me the recipe: how to quickly and easily prepare chewing marshmallows at home. Vanilla marshmallow are very soft, tender, sweet and airy. Such a dessert is a purely childish pleasure, but adults will not refuse such a treat.
I propose to make homemade marshmallows together with "Very tasty".
- 250 grams of sugar;
- 150 grams of invert syrup;
- 24 grams of gelatin;
- 75 - 80 milliliters of water for gelatin;
- 120 milliliters of water for syrup;
- one teaspoon of vanilla extract;
- 30 - 50 grams of powdered sugar;
- 30 - 50 grams of cornstarch.
Chewing marshmallows at home. Step-by-step recipe
- First of all, for the preparation of masticatory marshmallow, you need to pour 24 grams of gelatin with water and leave the gelatin swells (you can use gelatin, but for making our marshmallows more suitable powder).
- When gelatin swells, it will be necessary to heat it on a water bath (you can do it in a microwave, only in several stages) until completely dissolved, only in no case can gelatin be overheated
- Melted gelatin is poured into a whipping bowl, we add half of the invert syrup (the recipe for the preparation of invert syrup can be viewed on our website, and can also be replaced with glucose syrup or corn syrup) and whipped.
- In the saucepan pour sugar, add the second part of the invert syrup, water and put the sauté pan over medium heat, stirring until the sugar dissolves completely. When the syrup begins to boil, then bring to a temperature of 112 - 114 degrees (temperature measure with a thermometer) and remove from heat.
- In parallel, whisk the gelatin with syrup with a mixer.
- With a thin trickle, pour the syrup into the whipping bowl and at the same time increase the speed of the mixer to the average, and then put it at maximum. Beat up to a white, airy and strong mass.
- At the end of whipping, add the vanilla extract (you can add another extract: lavender, orange).
- The square shape (I took the shape of 23x23 cm) is covered with parchment paper and we spread an airy tractive mass there, evenly distributing it according to the form (do it all without slowing down, because the mass quickly solidifies).
- A small amount of mass is transferred to a culinary bag and we put it on long parchment with long strips (then you can cut small chewing marshmallows from them).
- We combine sugar powder and cornstarch. Mix well and sprinkle with this mixture the mass (in the form) and strips.
- We leave to freeze at room temperature for 12 hours.
- We extract the mass from the mold and cut the layer with cubes using a sharp knife (the table, hands and a knife should be well sprinkled with a mixture of powder and starch so that it does not stick to the hands). We do the same with strips.
Home chewing marshmallow - airy, elastic and just melts in the mouth. Small marshmallow can be added to a cup of coffee - this is a heavenly delight.
