Once, at my graduation, I first tried an interesting dessert with a slight taste of alcohol, with a lot of cherries - it was the cake "Drunken Cherry". This wonderful chocolate cake has a very delicate and insanely delicious filling. In addition, you can not worry about the fact that the cake cakes can not soak. In this wonderful cake prepared at home, this is simply out of the question.

Ingredients:

  • whole-wheat flour - 6 tablespoons (for dough) +1 tablespoon (for cream);
  • eggs - 6 pieces;
  • butter - 200 grams;
  • granulated sugar - 6 tablespoons (for dough) + 0.5 cups (for cream);
  • cocoa powder - 200 grams (for dough and fondant);
  • sugar vanilla or vanilla extract - to taste;
  • milk - 0.5 cup;
  • cherries frozen - 500 grams;
  • egg yolks - 6 pieces;
  • cognac or wine - for impregnation;
  • powdered sugar - 0,5 glasses.

Cake "Drunken Cherry". Step-by-step recipe

  1. The very name of the cake says that the cherry must be "intoxicated". To do this, remove the bones from the frozen berries and fill the berries with alcohol: for example, cognac, wine or vodka. We close the cherry with a lid and leave it to absorb the berries.
  2. Council. For the cake "Drunken Cherry" you can also use canned cherries.
  3. Prepare a baking dish. I take a detachable, diameter of 20-24 centimeters. I cover the bottom with parchment.
  4. Separate the protein from the yolk (in different dishes). Whisk egg whites together with a pinch of salt: until a thick, thick foam forms.
  5. In a separate bowl we beat the yolks: they should become light and increase in volume.
  6. To the yolks, add half of the sugar. And the other half - to the proteins. And we continue to whisk separately yolks and separately proteins - until the formation of stable peaks.
  7. To the whipped proteins send the yolks and gently, with a silicone spatula or spoon, knead in circular motions from the top down: so that the foam does not settle.
  8. To a lush egg mass, we sift the flour together with the cocoa powder. For the dough, use one tablespoon of cocoa powder.
  9. Council. If necessary, you can add one teaspoon of baking powder into the dough: but this is not necessary if you have beaten eggs well. And, if the dough is too light, you can add one more spoon of cocoa.
  10. All the ingredients for the cake to our homemade cake carefully mix, so that there are no lumps of flour and pour into the mold. Bake for 20-25 minutes in a preheated oven to 180 degrees Celsius. We determine the readiness of the cake with a wooden stick: it must remain dry and clean when piercing the cake - then the cake is ready.
  11. We prepare the cream for our simple and delicious cake. To do this, beat the yolks with vanilla or vanilla essence, add sugar. Egg yolks should be at room temperature.
  12. When the mass brightens and increases in volume, we add room temperature milk.
  13. In a cream for a cake we sift a tablespoon of cocoa powder and a tablespoon of flour. All mixed and put on a water bath.
  14. During the heating, the cream for the cake will thicken, so stir it frequently.
  15. The ready cream is allowed to cool.
  16. We remove the baked cake from the mold and leave it to cool completely.
  17. For the cream, we also need a softened butter, which should be beaten with half a glass of powdered sugar.
  18. Portually introduce to the oil mass the cooled custard and continue to whisk.
  19. When the cake for our delicious homemade cake will finally cool, you need to cut off the top with a sharp knife: about half a centimeter. We will get two cakes: one thin, and the other thicker.
  20. From the cakes with a spoon take out the pulp, leaving only a crust. Do this carefully, so as not to damage the cakes.
  21. Crumble from the cakes grind (crush) your hands and mix with the cream.
  22. Cherry the cognac and add it to the cream and crumb. All mixed.
  23. The liquid that drained from the cherry is heated on a stove with a few spoons of sugar added. Bring to a boil and set aside. Warm it up so that the alcohol evaporates slightly.
  24. Cognac-cherry liquid impregnate our crusts of cakes: the bottom, the top and the sides.
  25. We fill the bottom "box" of the cake with stuffing, evenly spreading over the entire area, and cover with the top.
  26. A little presses the top, and leave the cake soaked for several hours.
  27. We prepare a sweet for the cake "Drunken Cherry". In the remaining cocoa, pour 4-5 tablespoons of sugar and pour half a glass of cold milk into it, mix everything and put it on a small fire. The proportions of sweets are as follows: for 100 grams of cocoa powder, you need to take 200 milliliters of milk.
  28. Constantly stirring, bring the glaze to thickening and turn off.
  29. Now you need to add a teaspoon of butter and mix. The glaze must be uniform, shiny. Leave the glaze until it cools down completely.
  30. We put the finished home cake on the grate. We cover it with chocolate glaze and send it for several hours to the cold.
  31. Cake "Drunken cherry" can be decorated with a top oil custard, grated chocolate and cherry berries.
