  • cleaned pumpkin - about a kilogram;
  • flour - 400 grams;
  • butter - 250 grams;
  • 3 eggs;
  • sugar - 200 grams;
  • cream - 200 milliliters;
  • a small pinch of salt;
  • a teaspoon of vanilla sugar;
  • cinnamon to taste.

  1. Let's start preparing the pie from the preparatory works: sow the flour necessarily. (Do not ignore this rule, often because of wholemeal obtained quite dry pies). This way we make the pies air.
  2. Then, heat the room temperature oil with flour into a crumb.
  3. Whisk one egg and add it to the dough. Knead soft dough, wrap in food film and send to the refrigerator for an hour.
  4. In the meantime, prepare the filling: peel the pumpkin from the peel and seeds, finely chop.
  5. In a saucepan with a thick bottom, lay a pumpkin, add a little water and cook the pumpkin until soft.

  7. Now let's go back to the test: sprinkle the table with flour, roll the dough into a circle. For baking, I used a shape with a diameter of 30 cm.
  8. Form the oil and put the dough there, forming the sides.
  9. Send the bake to the oven, heated to 190 ° C for 15 minutes.
  10. While the base is baked, we will return to the filling: the pumpkin puree must once again be beaten with sugar, cream, cinnamon, vanilla, eggs and a pinch of salt.
  11. When the dough is cooked, put the pumpkin paste on top and return it to the oven for 50 minutes, at a temperature of 180 ° C.
