Very often I pamper my family with different cakes or cakes, but I always take very good care of the choice of cream. In the old cookbook of my grandmother, I found the recipe for the amazing cream "Charlotte": this cream was very widely used in Soviet times - today I will share this recipe with you.



  • egg - 1 piece;
  • milk - 150 milliliters;
  • butter - 250 grams;
  • sugar - 220 grams;
  • vanilla essence;
  • cognac - 1 tablespoon.

  1. Prepare a dish so that the milk when heated does not burn and it does not get dark. Milk is poured into a prepared pan and poured out sugar. Approximately 10 percent of sugar should be left: it is still useful.
  2. We put a pot of milk on the stove, on a slow fire, constantly stirring, let the sugar dissolve. We bring it to the boil and boil it - 1-2 minutes. We remove from the fire.
  3. Egg whisk with the remaining sugar whisk, then a thin trickle pour the hot milk syrup into the eggs, constantly stirring with a whisk.
  4. Then back we pour everything into the pan, put it on the fire and continue stirring: cook until thick. The consistency of the resulting custard should resemble a not very thick condensed milk.
  5. Pour the custard into a cold container in order to stop the cooking process finally, and allow to cool. When the mass cools, the cream will thicken a little. Every 10 minutes stir to prevent the formation of a film.
  6. Softened butter should be beaten with a mixer. The optimum oil temperature is 20-21 degrees Celsius. It is at this temperature that the oil gives the maximum volume.
  7. Then in the oil add a small portion of the custard. Periodically, we collect the cream from the edges of the dishes in order that it gets stuck evenly, there are no lumps.
  8. Recommended proportions of "Charlotte" cream: one part of butter 1.4 parts of syrup.
  9. At the end of whipping, it's time to add vanilla extract and cognac. If you do for children, you can do without alcohol.

Amazing cream "Charlotte" is ready. The home cream turns out very gentle, well keeps the form, it is easily put or rendered.
